What if you eat less meat? Well, the world won't fail ðŸ™‚I know what I'm saying. I love all the variations of vegetable cuisine and have long convinced myself that meatless dishes can be simply delicious. And I'm not just talking about home fries🙂
Some time ago I promised myself that I would not only buy cookbooks and admire the beautiful photographs. I will also cook them regularly and regularly. In September, the first to go was the book by Erik WaÅ‚kowicz, author of the blog Er Vegan, and his book "Plant Lunchbox" . In Eric's book you can find vegan recipes, i.e. without any animal products. It sounds like a challenge to someone like me who loves butter and Parmesan cheese. I thought so until I tried the insane cauliflower and surprisingly delicious carrot salad.
Of course, I took pictures and today I will share these recipes with you. Make them, please! And write me if you can convince yourself to eat vegetables more often ðŸ™‚
Let's start with breakfast. Warm millet or porridge is my dream breakfast. I am definitely a fan of sweet breakfasts.

MY FAVORITE COCONUT MIX 
Ingredients for groats:
- 100 g of millet (for 2 people)
- 1/2 cup of coconut milk
- 2-3 tablespoons of coconut flakes
- A tablespoon of maple syrup (or more if you need)
- A bit of lemon juice
Ingredients for a nut sauce:
- 2 tablespoons peanut butter (100% nuts, no sugar)
- tablespoon lemon juice
- 2 tablespoons maple syrup
- 2 tablespoons water
Plus your favorite fruit and almond flakes roasted in a dry pan.
Rinse millet under running water, pour 2 glasses of water and boil. When it is almost ready, strain it, pour in the coconut milk, pour in the coconut flakes and heat until the milk is reduced. The groats must be soft and sticky. Sweeten it with maple syrup and add a few drops of lemon juice.
Heat the ingredients for the nut sauce in a saucepan and blend until smooth.
I love it with blueberries and mixed raspberries with a little cinnamon, but it will also taste great with pineapple, for example. Do not forget about roasted almond flakes.


VEGAN BUDDA BOWL or cauliflower in a super delicious marinade + additions The
Buddha bowl is nothing but a bowl full of various ingredients that combine to form something like a hot or cold salad. You can combine at will, and when you enter the password "buddha bowl" on Pinterest you will discover how beautiful and colorful lunch for work can look like. Cauliflower and carrots definitely reign in this bowl.
Ingredients:
cauliflower (I used 1/2 small head for lunch for 2 people)
3 tablespoons dark soy sauce
1 tablespoon tomato passata
1 teaspoon maple syrup
1/2 teaspoon smoked paprika
2 tablespoons oil
1 tablespoon teriyaki sauce (optional)
sesame
Divide the cauliflower into florets. In a bowl, mix all ingredients for the marinade (except sesame) and mix. Place the cauliflower in the marinade so that it sticks to it thoroughly. It would be perfect if the cauliflower spent the whole night in this marinade, but if you are impatient like me, just half an hour ðŸ˜€
Sauté the cauliflower in a heated frying pan along with all the marinade poured from the bowl. You will have to add water from time to time, mix everything and stew under cover until the cauliflower is soft and the marinade will turn into a thick, sticky sauce. Sprinkle with sesame seeds.
Cauliflower ready. It should be relatively soft, but do not fall apart. Time for a delicious carrot salad.
Ingredients:
2 carrots
4 tablespoons pumpkin seeds
1 small chilli pepper
1 tablespoon soy sauce
1 tablespoon good oil
ice or very cold water
salt, pepper
Grate carrots on a coarse mesh. If you have a carrot spaghetti maker or so-called Julienne peeler - use it. This way you will get fancy carrot ribbons (this is not necessary).
Place the grated carrot in ice water.
In a dry frying pan, fry pumpkin seeds for 2 minutes, then turn off the gas and add soy sauce. Mix everything.
Chop the chilli finely.
Drain the carrots, add pumpkin seeds, chillies, oil, season with salt and pepper.
In my Buddha bowl I put a few spoons of cooked buckwheat, pickled cucumber, cauliflower and carrot salad. I fell in love with these flavors.
EXPRESS VEGETABLE HEATING CURRY
This curry is an ideal way to use withered vegetables in the fridge. You can add peanuts or cashews, spinach or kale leaves or the remnants of various groats or rice to it. Combine - it's the perfect one-pot take-away.
Ingredients:
1 zucchini peeled, seedless and diced
1 paprika cut into strips
1 large onion finely chopped
2 carrots diced
3 cloves garlic finely chopped
tin of tomatoes
half a glass of red, small lentils
2 cm piece of grated ginger
glass of coconut milk
2 tablespoons curry
2 tablespoons tom yum paste (optional, but it's really worth adding)
2 tablespoons soy sauce
1 teaspoon sweet pepper
1/2 teaspoon turmeric
salt to taste
2 tablespoons oil
Fry the onion and garlic in hot oil for a while. Add the rest of the chopped vegetables, mix them thoroughly. Add canned tomatoes together with the marinade and simmer for a while. Add all spices, grated ginger, lentils and mix. Pour the curry into coconut milk and mix. Stew under cover until the vegetables are soft. You will probably need to water the dish from time to time with a little water to prevent it from burning.
Finally, season with salt if necessary. Serve with sesame seeds. It tastes great with fresh coriander.

At the end something delicious, which even surprised me. From peaches, which I would probably throw away once, and from raspberries, which fell apart because they were too soft, a delicious September dessert was created. A textual , #lesswaste fan would be proud of me. ðŸ™‚I don't throw it away, I use it.
GRILLED PEACH WITH RASPBERRY SAUCE
This recipe is really trivial.
Raspberries, say a glass, soul on slow fire with a tablespoon of grated lemon zest, 1/2 teaspoon cinnamon, a pinch of nutmeg, a tablespoon of maple syrup and a pinch of salt. They are to fall apart and form a sauce. I like to blend them at the end.
Cut the peaches into quarters and grill in a dry pan. They can also be baked. I pour sauce on them.
I think they would taste great as an addition to porridge or with granola. They are delicious! A berry or blackberry sauce would also be great. And again - try it🙂
